Roasted cauliflower with green cream sauce

Ingredients


  • Cauliflower

  • Sauce base

    • green peas + avocado + vegan mayo + salt and pepper + soy sauce *You can be creative with the base using chickpeas or beans. You can use soy yoghurt or cream to substitute the vegan mayo, along with lemon juice and mustard.

  • Seasoning

    • Turmeric powder

    • Smoky paprika

    • Cumin powder

    • Glazed with soy sauce + salt + vegetable oil


Instructions


  1. Cut the cauliflower into small pieces and boil them for 15-30 seconds. This is to prevent cauliflower getting burned from roasting.

  2. Marinate the cauliflower in a bowl, then bake it at 180°C for 15-20 minutes.

  3. Blend all the ingredients for the sauce base, and garnish it with basil oil.

  4. Place the prepared cauliflower on top and enjoy!
