Roasted Red Pepper Sauce for your quick pasta & sandwich





Ingredients

(1-2 portions)

  • 3 fresh tomatoes/a can of plum or chopped tomatoes

  • 10g tomato paste

  • 1/2 red peppers

  • 10g vegan mozzarella/cheddar cheese

  • pinches of dried thyme, oregano, basil, or other herbs of your choice

  • salt, black pepper, nutritional yeast, to taste

  • 3 tbsp olive oil



Instructions


  1. If using fresh tomatoes, make a small cross-shaped incision on each tomato, and boil them in hot water for 1 min. Once cooled, peel off the skin. Then cube tomatoes. Otherwise, go straight to step 2.

  2. Heat olive oil in a pan and sauté tomatoes.

  3. Add tomato paste, vegan cheese, herbs, and other seasonings, and give it a good mix. Slice red peppers into pieces and roast (or pan-fry) with olive oil.

  4. Blend everything at a high speed.

  5. Enjoy with pasta or sandwich!
